Does Samya read my SMS or connect to my bank?

No. Samya doesn't read SMS, emails or bank statements and doesn't connect to your bank. You add transactions yourself, which keeps your data private and keeps you aware of every Rupee.

Where is my data stored?

On your iPhone. If you turn on automatic backup, daily backup files are saved to your own iCloud Drive. Naturally Stupid has no access to either.
